Palakh Ghojto Winter Vegetable Curry

INGREDIENTS:
For tempering:
- Mustard oil – 1tbsp
- 2 whole red chilies
- Bengali five spice – 1 tsp (fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed in equal parts)
- Garlic paste – 1tbsp
- Ginger paste- 1tbsp
Other Ingredients:
- Onion – 1 medium, chopped
- Cumin power & Coriander powder – 1tsp+1tsp (homemade)
- Turmeric paste – 1tsp
- Carrot – 1 small, cut into cubes
- Long green beans/Barbati – 145 g, cut into one inch size
- Runner Bean – 230 g. Cut into broader pieces
- Radish – 170 g, cut into cubes
- Potato – 1 small, cut into cubes
- Green chili – 2-3, slit lengthwise
- Brinjal – 260 g. Cut into big cubes
- Spinach leaves – 350 g, properly cleaned and washed
METHOD:
- Add oil into a pan. When the oil heats up, add the tempering ingredients and let it cook on low heat for 5 minutes.
- Now add the onions followed by turmeric paste, coriander and cumin powder. Sauté for 2 minutes, add a little water to prevent the spices from burning.
- Now add all the remaining ingredients except for Spinach and Brinjal, add salt according to your preferences (I added about 1tsp).Mix well, cover and cook for 5 minutes.
- Now add the spinach and Brinjal, mix well, cover and cook on low flame for 20-25 minutes.
- Your nutritious spinach curry is ready.
- Add lemon juice if you like and enjoy it with a hot bowl of rice.
