Sweet Potato Chaat
Ingredient
- Brown Sugar cinnamon sweet potato – Serving (from the pre – cooked batch)
- Apple Cubes- 60gms
- Rice papaya fruit cut into cubes- 50gms
- Home made curd – 100gms (6 tsp)
- Pomegranate fruit – 50gms
- Rock Salt – According to taste
- Chaat Masala – 1 tsp Tamarind paste – 1 tsp
- Pumpkin Seed – 5gms
Method
- Take a big bowl. Add all the above mentioned ingredients ( Except pumpkin seed)
- Mix well
- Add the pumpkin seeds from top as garnishing 4) Enjoy as your evening sweet of salty fun treat which is loaded with health & goodness

Stuffed Zucchini
Ingredients
- Zucchini – 3 large / 6 medium Halved and Middle scraped (about 1100gms) to form a cavity for stuffing
- Raw Button / oyester Mushroom – 150g (chopped fire)
- Onion – 200g (chopped fire)
- Frozen corn – 100g (American corn)
- Nutrela Soya Granules – 120gms dry weight. Pour Hot water and let it hydrate. Then rinse all the water.
- Carrots -200gms (cut into small cubes)
- Block pitted olives – 20g (optional)
- Olive oil – 15ml
- Diet Cheddar cheese – 100gms
- Mozzarella cheese – 100gms
- worcester shire sauce – 30ml
- Cumin powder – 2 tsp
- Black pepper powder – 2tsp
- Salt – 1 tsp (As per taste)
- Nutmeg powder – 1 tsp
- Parsley Leaf – 50gms chopped
- Home made Salad – 300gms
- Garlic Minced – 20g
Method
- Heat water in a big bottom high Pan. Blanch the hollered Zucchini halves for 1 minute.
- Take out and let it cool.
- In a big wok add the olive oil. Add Onion, garlic and santee
- Nero add the Mushrooms cook for 5 mins. Add salt & black Pepper.
- When these ingredients turns translucent add the cubed carrots. cook for 5 to 7 more minutes
- Next add the soyabean granules. Cook covered for 7 to 10 mins after simmering the oven.
- Now add the napped parsley (about half the quantity). Add the scraped middle part of the zucchini after chapping it finely
- Add cumin powder, nuting powder, wore stershine sauce
- Open the lid & look for 5 mins.
- Add the frozen american corn & pitted slack olives ( cut into small pices)
- Let the water or misture evaporale. Nero add the low fat cheddar cheese. It acts as binging agent and gives kind of a stikiness to the mixture.
- Take a big oven proof squre dish. Made a thin layer with home made salsa.
- Arrange the zucchini halves
- Fill it with the prepated filling
- Top with Mozzarella cheese. cover with aluminium fail & let it cook / bake in a pre – heated oven (175-1800)for 3 mins
- After 30 mins take out the cover & let the cheese brown & melt little
For Plating
- Take out 1 portion of Zucchini
- Top with hung curd dip & Preserved parsley
- Serve to yours friends & family enjoy.
